The whole menu revolves around the ancient and majestic wood-burning furnace of the farm dating back to 1700.

Using home-grown raw materials together with ingredients from a very short supply chain, we will leave for a sensory journey to discover one of the most ancient Apulian culinary traditions: THE FORNELLO (ancient oven).

Enjoy a 6-course menu with aperitif included in a typical Apulian farm of 1700mq and surrounded by lush nature.

The host Mauro will be sharing the experience with his guests by cooking in front of them and telling them about the history and the culture of this family tradition which I-he inherited for many generations.

About your host Mauro: "Through the kitchen, I try to convey the magic of my Puglia.
Recipes handed down for generations, genuine products, and traditional cooking methods, are the ingredients of my sensory journey to discover ancient flavors immersed in an authentic setting, a 1700 farm surrounded by lush nature."



Sample Menu

• Welcome drink, baked beans, taralli, olives - The classic Apulian entertainment
• Upper the table - All those dishes that must never be missing on the Apulian table, that is raw vegetables, vegetables in extra virgin olive oil, bruschetta, focaccia
• Caciocavallo podolico - A typical specialty, increasingly difficult to find
• Bombette - Very thin slices of pork neck wrap the caciocavallo, put on the spit and cook slowly on the grill
• Zampina - The typical Apulian sausage rolled in a spiral of flavors that only the olive wood embers can release
• "Gnimiridd" - Lamb entrails rolls flavored with parsley and bay leaf, a real delicacy
• Raw vegetables - Tasty carousels and lush celery, a selection of seasonal vegetables, organically grown in our garden
• Fruit and sweets - Typical sweets of the Apulian tradition always vary according to the season
